These Deep Dish Pizza Bites are the perfect bite-sized snack for pizza lovers! Made with a savory crust, tangy tomato sauce and melted mozzarella cheese, these mini pizzas are a crowd-pleaser for any occasion.

2 cups Krusteaz® Buttermilk Pancake Mix
⅔ cup Cold water
1 tbsp Olive oil or canola oil
3 tbsp Pizza sauce
6 tbsp Shredded Mozzarella cheese
¼ cup Miniature pepperonis
1 tbsp Finely chopped basil or parsley, for serving (optional)
STEP 1

Preheat the oven to 400° F. Spray a 12-cavity muffin pan with nonstick cooking spray.

STEP 2

Place the pancake mix, water, and oil in a large bowl. Stir with a wooden spoon until the ingredients are combined into a soft dough. The mixture will be somewhat sticky.

STEP 3

Divide the dough evenly between the 12 cavities. With clean, slightly dampened hands, gently press the dough into the bottom of the cavities and halfway up the sides.

STEP 4

Spoon 1 teaspoon of sauce onto the bottom of each pizza. Top each with 1/2 tablespoon of shredded cheese and roughly 5 mini pepperonis.

STEP 5

Transfer the baking pan to the middle rack of the oven. Bake for 17 to 19 minutes, until the pizzas are lightly browned.

STEP 6

Remove the baking pan from the oven. Allow the pizzas to rest for 5 minutes. Carefully remove from the pan using the tip of a paring knife, and transfer to a serving plate. Sprinkle with finely chopped fresh herbs, if desired, and serve immediately.

Can sub pepperonis for any of your favorite pizza toppings! Like Hawaiian or barbecue chicken.

See below for alternate pizza instructions:

For Hawaiian pizzas: spoon 1 teaspoon of sauce onto the bottom of each pizza. Top each with 1/2 tablespoon of shredded cheese, 1 teaspoon of diced ham, and 1 teaspoon of finely chopped pineapple.

For barbecue chicken pizzas, place the chicken and 2 tablespoons of barbecue sauce in a small bowl and stir to coat. Spoon 1 teaspoon of the remaining barbecue sauce onto the bottom of each pizza. Top each with 1/2 tablespoon of shredded cheese, 2 teaspoons of chicken, 3/4 teaspoon of red bell pepper, and 3/4 teaspoon red onion.
