STEP 1

HEAT oven to 400°F. Line muffin pan with paper baking cups or lightly grease.

STIR together water, oil eggs and muffin mix until blended. Batter will be slightly lumpy. SPOON 1 1/2 tablespoons muffin batter into each cup. SPOON 1 teaspoon filling (enclosed) into each muffin cop. SPOON 1 1/2 tablespoons muffin batter on top of filling, making sure filling is enclosed by batter.

BAKE 16-19 minutes or until tops are golden brown and firm to the touch. Cool 5 minutes; gently loosen and remove from pan. Store cooled muffins in tightly covered container.

For an extra rich filling, combine 4 ounces softened cream cheese and content of filling packet in a bowl; stir until smooth. Spoon 1 tablespoon filling mixture into each cup.
