Buttermilk Pancakes with Mixed Berry Compote
STEP 1
Heat oven to 375° Lightly grease or line baking sheet with parchment paper.
STEP 2
Combine pancake mix, oats, sugar and spice in a medium bowl. Add 3 Tbsp chopped butter and using fork, hands or pastry blender, cut butter in until streusel begins to hold together. If needed, add 1 more tablespoon butter.
STEP 3
Crumble streusel over baking sheet, spreading in a thin layer.
STEP 4
Bake 12-16 minutes or until streusel is set and golden brown. Cool completely.
STEP 5
Place berries and orange juice in small saucepan over medium heat. Bring to boil. Reduce heat and simmer 10-12 minutes, mashing berries as they soften.
STEP 6
Stir in cinnamon. Keep warm until ready to use.
STEP 7
Heat pancake griddle to 375°F (medium heat). Lightly grease griddle.
STEP 8
Measure mix by lightly spooning it into measuring cup and leveling it off.
STEP 9
Whisk mix and water. Do not over-mix. Let batter stand 2 minutes.
STEP 10
Pour slightly less than ¼ cup batter per pancake onto griddle. Cook 1-1 ½ minutes per side, turning only once.
STEP 11
Top pancakes with warm compote and a sprinkling of streusel topping.
